Day 1: And So It Begins

I have to admit that deciding on a Keto Diet was not something that I had planned for very long or even gave much thought to. Crazy I know! You would think that I would have at least planned a few meals. But nope. This girl just went cold turkey and completely changed her pantry needs on the fly. So when I got to my kitchen this morning and prepared the lunches for my children, I was not quite sure what I was going to be eating for lunch. Spaghetti with Rosee sauce was not an option. I knew the easiest thing to pull off would be hard-boiled eggs. So that is what I went for.

My First Official Keto Meal

Ok, so it’s nothing fancy really. Just 2 eggs, feta cheese, cherry tomatoes and sliced cucumber. The whole sprinkled with salt. For something unplanned, it worked out flawlessly.

I took advantage of the fact that I had an early morning appointment to postpone my breakfast. It was 11 am when I finally ate my meal and this ended a 15 hour fast. Before the holidays, I had started intermittent fasting and would fast 16 hours daily and eat all my meals in the span of 8 hours. Lunch/brunch was very good. My belly was full and happy. However, soon after lunch, I began feeling the familiar symptoms of glucose withdrawal. Or is it? It seems a bit soon for this to start. I second guessed myself and decided that I may very well be dehydrated. So I made a tremendous effort to drink way more water than I usually do. I am finishing off my 4th 24oz bottle as I type this. Needless to say, I spent a lot of time going to the washroom today…

In the early afternoon, I made my way to my nearby Costco in order to stock up on some Keto friendly ingredients. A house full of sugary snacks, fruits and pasta won’t do me any good. I purchased some raw almonds and cashews, almond milk (unsweetened of course) and coconut milk, avocado, zucchini, shrimp, baby peppers, mushrooms, you get the idea…

Once back home, I prepared a shepherds pie for the kids to have dinner. Then I proceeded to create a mock shepherds pie.

Over all, I think day 1 went fantastic and I’m looking forward to this “diet” and to sharing the adventure. But right now, it’s time to lay my head to sleep. Tomorrow will bring more magic, of that I am certain.
